Recipe: Pumpkin Spice Steel Cut Oats

TO ME, EVERY SEASON IS PUMPKIN SPICE SEASON…

So it’s suuuper nice when the whole world gets on board with this glorious flavor in the fall. With the cooler weather, I like to start my day with something warm and comforting. This recipe for pumpkin spice steel cut oats has become a fast favorite for myself and my husband, Ryan.

I hope you find a quiet moment in the morning to make this stovetop breakfast for yourself. I also think it tastes better in flannel jammies while wrapped in a soft blanket cocoon on the couch…just sayin!

RECIPE (SERVES 2):

  • 3/4 c. steel cut oats (I used Bob’s Red Mill Steel Cut Oats)

  • 2 T. ground flax meal

  • 1 T. chia seeds

  • 1 tsp. pumpkin pie spice

  • 1/3 c. pumpkin puree

  • 2 T. pure maple syrup

  • 1 1/2 c. water

  • Pinch of salt

  • Optional: Pumpkin seeds or chopped nuts to sprinkle on top

Add all ingredients in a small pot and bring to low boil. Turn down the heat to low/medium and simmer for 5-7 minutes, until it reaches your desired thickness. Spoon into bowls and top with pumpkin seeds, chopped walnuts, chopped pecans, butter, ghee, coconut oil, or anything else you’re feelin’ that day.
